Create .txt packages lists for each platform

This MR mitigates some of the impact of #73 by adding support for conda pinning files for all platforms. These also double as 'simple' environment specifications compatible with conda create --file=<>.

This ended up with a refactoring of how the markdown page is written for each environment to better document what can be done with the various linked files.
