Simplify version metrics [testing]

This MR simplifies the package version metrics introduced in Add info metrics for linux-64 environments (!1476 - merged) in an attempt to improve the visualisation of changes to packages.

The info metric is now a gauge where the value is the version=build_string combination for that package, with no metric labels.
