Version 1.2.1 Release

This is a bugfix release ahead of the face-to-face meeting this week.

Note that releases no longer explicitly bump the version number as that is handled by the creation of a tag.

Since we now don't need to bump the version number anywhere in the repo, how would people feel about not having MRs for version updates, but just having direct pushes to the changelog before creating the new tag? If you see this and have an opinion please or .
