Ci updates

Colm Talbot requested to merge ci-updates into master

The last change in the testing versions broke some aspects of the CI. In an attempt to make this more robust I moved to more variables and reduced the number of specific references to python versions/paths etc. Hopefully when we want to switch default version or add a new test version that will be painless.
