Fix bug in macOS wheel job and run at least one macOS wheel job in a manual pipeline

Description

This MR fixes a bug in the syntax of the macOS wheel job, and updates the CI configuration to run at least one of those jobs in a manually triggered pipeline - so that there is a way to test these sorts of things before merging.

Fixes #490 (closed).
