set the timeout of the coverage job to 2 hours

Description

For a while the default timeout of LALSuite jobs was one hour but this was recently increased to two due to the coverage job taking a little longer than an hour, this manually sets the timeout of the coverage job to two hours which will override the value set in users forks in case they have not updated it.
