Draft: remove macos-x86_64 builds

Description

The x86_64 Mac Minis, model Macmini7,1, only support up to macOS Monterey and after the release of Sequoia earlier this month Monetery is no longer supported and as such is not receiving any security updates. As such we are going to need to remove these from the pool and trherefore remove all the current jobs that run on macos-x86_64.

This MR removes all the macos-x86_64 builds from the CI pipeline.
