Minor improvements to conda build CI configurations

Description

This MR makes some changes to the CI configuration for the conda builds:

  • use set -x to display verbosely what is being done during each step
  • added cache/key to properly isolate caches for different jobs
  • removed custom GIT_CLEAN_FLAGS to try and reinstate clean environments
